Some nights you just don’t feel like cooking. You also don’t feel like going out. If you’re like me though, you always feel like eating. See the dilemma here?
Grilled cheese sandwiches are quick and easy and they don’t require any extra spices or sauces or crazy ingredients that you need to plan ahead for. They can also be pretty boring though. My favorite ways to add excitement to a grilled cheese sandwich? First off, forget the single-packaged slices of rubbery, orange-dyed american cheese. Second…one word: AVOCADO.
Fresh avocado & ripe tomatoes wedged between thick slices of smoky gouda cheese (one reason why I can’t be full vegan) bring this grilled cheese to life. It’s a full meal in minutes!
Smoked Gouda & Avocado Grilled Cheese Sandwiches (makes 2 sandwiches)
- 4 slices of Whole Wheat Bread
- 4 slices of Smoked Gouda Cheese
- 1 large Avocado, sliced lengthwise, seed & skin removed
- 1 Roma Tomato, sliced
- ½ cup Spinach leaves
- Earth Balance (or other butter-flavored spread)
Butter a medium-sized skillet with a small dab of earth balance (or other spread) and put on medium heat. Butter one side of each piece of bread. Lay two slices of bread, buttered-side down in the skillet and top each with one slice of cheese, slices from ½ the avocado, slices from ½ the tomato and ¼ cup spinach leaves. Top each with the leftover slices of cheese and additional slices of bread, buttered-sides up. Let them cook for about another 2 minutes or until the outside of the bread on the pan starts to turn golden brown (you can check with a spatula). Flip and let cook additional 3-5 minutes, until the second side of the sandwich is browning and the cheese is starting to melt. Remove from heat and cut into triangles.
