Goat Cheese, Avocado & Fresh Basil Grilled Cheese Sandwiches

Goat cheese?  YUM.  Avocado?  Deee-lish.  Fresh basil?  Holy crap.  I never knew a grilled cheese sandwich could taste so good.  Until I tried this combination.

Before uniting these delightful flavors together between two toasty slices of whole grain bread, I had my fair share of them on their own.  But once I tasted how amazing their togetherness was?   It was like they never should be apart again – ever.

Peanut butter & jelly, Spaghetti & (meatless) meatballs, nutella & my mouth.  Some things are just better together.  Goat cheese, avocado & fresh basil should be added to that list.

I loved these so much that I made them the next day for lunch.  And then the next week again for dinner.  And now that I’m writing this post, I may make them again tonight.  Mmm…

Goat Cheese, Avocado & Fresh Basil Grilled Cheese Sandwiches

Ingredients

  • 4 slices of Whole Grain Bread
  • 1 medium Avocado, sliced
  • 4oz of Goat Cheese
  • ½ cup Spinach
  • Fresh Basil Leaves
  • Buttery Spread (such as EarthBalance)

Directions

Butter a medium-sized skillet with a small dab of EarthBalance (or other spread) and put on medium heat.  Butter one side of each piece of bread.  Lay two slices of bread, buttered-side down in the skillet and top each with goat cheese, slices from ½ the avocado, ¼ cup spinach leaves & a few fresh leaves of basil.  Top each with the additional slices of bread, buttered-sides up.  Let them cook for about another 2 minutes or until the outside of the bread on the pan starts to turn golden brown (you can check with a spatula).  Flip and let cook additional 3-5 minutes, until the second side of the sandwich is browning.  Remove from heat and cut into triangles.
