Balsamic Roasted Brussels Sprouts

Sorry Mom, another post on Brussels sprouts that you’re not going to like.  Who knew your favorite child would grow up to love these little suckers?

I will admit though, this isn’t my favorite way to prepare Brussels sprouts.  If you have tried my Maple Roasted Brussels Sprouts already, you will likely agree!

It kind of depends on what kind of mood you’re in.  Sweet or savory?  Ask yourself that and you’ll have your answer as to which way to cook these mini cabbages heads.

Balsamic Roasted Brussels Sprouts

Ingredients

  • 1 lb. of Brussels Sprouts
  • 3 TBSP Olive Oil
  • ¼ cup Balsamic Vinegar
  • Salt & Pepper

Directions

Preheat your oven to 375°F.  Cut Brussels sprouts in half, lengthwise.  Toss in olive oil & balsamic vinegar and spread into a casserole dish that has been sprayed with cooking spray.  Sprinkle with salt & pepper.  Bake for 30 minutes, stirring once halfway through.

  1. I hate to say this, but as your Mom, I’m glad you found a taste for these. Turns out, they are extremely healthy for you…now if I can just get you to like mushrooms!!!
