When we came home from the hospital with Noah (our newest addition!), I was tired, overwhelmed and just trying to get the hang of this whole parenting thing.
A few weekends ago, some of our best friends came into town to visit. And what better way to treat some wonderful friends than to a pan full of deliciousness for breakfast? Especially when they are the kind of friends that love to eat as much as you do (judgement-free zone!).
My husband is the type that could eat Mexican food for breakfast, lunch and dinner every single day. We don’t do this (sorry hubby).
I usually try to avoid quesadillas when going out to eat because whenever I think of them, I think of LOTS of greasy cheese. This “veganized” version of veggie quesadillas has a smoky white bean “paste” that packs a punch of flavor & heat so you won’t miss the cheese at all.
