One of my very first posts was a Vegan Mac & Cheese recipe. Mac & cheese is one of those meals you can never have too much of. Good thing too considering when you’re a vegetarian and you have a baby, that’s about the only thing you’ll get! I’m not complaining at all that – trying out every one of my friend’s different versions of mac & cheese was a delicious endeavor :).

I don’t know about you but I’ve about had enough of this cold weather. And where I am, it’s not even one of those “pretty” winters that you see on Hallmark Christmas movies. We rarely get snow here (and if we do, it’s an inch or so and everything shuts down). We are the unlucky ones that stuck with the freezing cold rain at 33°.
When I was a meat-eater, I never was a huge fan of chili. I could never really pinpoint what I didn’t like about it. Maybe it was the kidney beans, or the chewy bits of beef…moo…
The other day, the hubby and I went over to my parents’ house for dinner. Bison chili for the meat-eaters, tempeh chili for the vegetarians (and I am the lone ranger in this category). My mom has been wonderful at going out of her way to make sure I can eat if she invites us over for dinner.
When I signed up to participate in the Virtual Vegan Potluck weeks ago, I knew without a doubt what I was going to post about. Then I made it. And then I tasted it. And it was an epic fail. I was back to square one and to be perfectly honest, it has been quite the struggle to decide what creation would be the perfect addition to the VVP this year.
